It’s been awhile since I shared a dessert. I was really hoping to share Lemon Bar but each recipe I’ve tried has unfortunately failed and I’m not about to feature a nasty recipe, it’s just not who I am. So I decided on one of my favorites and one I make at least twice each fall… Oatmeal Pie!
I was actually amazed to find out a handful of my friends have never heard of it before and to find out that they have but never tried it because they don’t like enjoy a bowl of oatmeal on a cold fall morning. Well, to be honest, if it’s not peaches and cream oatmeal, I don’t enjoy a bowl of it either. But oatmeal pie… that’s another story. It’s a hint of oatmeal, a tad bit of coconut, and a mouthful of sweetness in 101 forms! So let’s get started.
*First I should admit that always use a pre-made crust in either Jiffy box form or Pillsbury rolled dough form, so unfortunately I do not have a pie crust recipe.
Ingredients: This recipe makes 2- 1 shell pies.
3/4 cup oatmeal
1/2 cup sugar
1/2 cup brown sugar
3/4 cup corn syrup like Karo (I use light)
1/2 cup melted butter
2 eggs well beaten
1 cup coconut shavings
3/4 cup milk
Mix all ingredients in a large bowl. Pour into 2 unbaked pie shells. Bake at 375º for 45 minutes. Allow to cool completely before slicing.
