By now, most of us have ushered our children back into the hallowed halls of school. Whether you did this with a tear in your eye or jumped up for joy, we all know this means autumn is coming. When thinking about what to share with you all this week, it was an easy task. Every year since I discovered this recipe, it has become our ‘1st Day Back to School Tradition’. Imagine taking a bite of banana nut bread and finding an apple chuck, it’s like finding hidden candy!
I’ve timed myself prepping this and it takes about 20 minutes to get it ready for the oven and then 60-75 minutes to bake, so most of the time I bake it the night before and then warm up slices in the morning. I made it again today for a Mother-Daughter brunch with my little girl.

1/2 c margarine
1 c sugar
1 3/4 c all-purpose flour
2 3/4 teaspoons baking powder
1 c peeled, chopped apple
3 med bananas, chopped
1/2 cup chopped walnuts
First off, spray a bread pan with the cooking spray and set the oven to 350º. Go ahead and prep up the apple and bananas.
In a large bowl cream the margarine and gradually add the sugar beating until light and fluffy. Add the eggs and beat until thick and almost a lemon color.
Combine the flour and baking powder, add to creamed mixture, mixing well. Fold in the apple, bananas, and nuts.
Pour batter into the loaf pan and bake for 60-75 minutes or until a toothpick inserted comes out clean. Let it cool for about 10 minutes and grab a glass of milk for a filling breakfast!
